In the early days of The Fat Duck, it was a treat to pop over for a quick pint after service on Sundays. In 2004, when the opportunity arose to take over such a historic pub, I jumped at the chance. As part of the current day–to-day operations, it is important for me to pay homage to The Hind’s Head 500 year history with a menu that is inspired by Britain’s rich culinary legacy with our interpretation of centuries old recipes being featured alongside classic pub favourites.”
