Gourmet-Ski

Gourmet-Ski Courmayeur – 17 to 20 March 2017, Courmayeur, Aosta Valley, Italy

Now in its fourth consecutive year, the Gourmet-Ski experience is an opportunity, curated by Heston Blumenthal, to experience two incredible dinners exclusively created for the event by three of the greatest UK chefs, prepared in rustic mountain settings.

The chefs will devise dishes for menus that are unique to the event, blending their personal styles with the rustic settings and mountain produce. Chefs for 2017 invited by Heston are Sat Bains, Clare Smyth and Claude Bosi.

A selection of starters from our A La Carte menu

The A la Carte selection of starters at The Hinds Head currently includes (clockwise from top left);

Terrine of Pork and Cumbrian Ham, Piccalilli. For this dish we use four types of pork – Ham Hock, Air-dried Cumbrian Ham, Tenderloin and Pork Rillette – and pistachios and baby leek wrapped with Savoy cabbage and accompanied by piccalilli.  The tenderloin is prepared using a traditional method of making ham where it is brined and rubbed with spices. The overall flavour of this dish is a classic combination of cider and ham hock, pork and leek.

Pan Fried Scallops, Celery, Walnuts, Monks Beard, Compressed Apple and Langoustine Oil. Hand dived pan seared scallops from Orkney (Scotland). The dish is based on the famous Waldorf salad flavour combination. Monks Beard is one of the British Isles’ native seaweeds.

Tea-smoked Salmon with Sour Cream Butter, Soda Bread. One of our signature dishes, the salmon is cold smoked in-house with Lapsang Souchong, a Chinese smoked tea. The smoke moves through a layer of ice before hitting the salmon which preserves texture and gives a more delicate flavour. Served on homemade soda bread with sour cream butter and dill pickled cucumber.

The wonderful Devils on Horseback – prune soaked in Armagnac, injected with mango chutney, wrapped in pancetta and cooked under the grill. A close relative of Angels on Horseback this is a 19th century (Victorian) variation.  Believe it or not oysters used to be food for the poor and the prunes were for the more wealthy!

…and our famous Scotch Egg. A soft boiled quail’s egg wrapped in sausage meat, double coated in Panko breadcrumbs. The tiny egg has been through three different cooking methods by the time it is served (boiling water, deep frying and oven) and yet it remains perfectly runny. Served with a mustard mayonnaise dip, our Scotch egg has been on the menu since the restaurant opened and remains a Hinds Head signature dish.

On Sunday 12th June 2016 we are excited to be presenting a very special Afternoon Tea here at The Hinds Head, Bray.

The Afternoon Tea is in celebration of the Queen’s 90th birthday and Head Chef János Veres has been working with the recipe development team to come up with an offering of familiar and surprising treats for the eyes and taste buds.

This very special event would make a lovely gift for someone special or to say thanks or happy birthday. Perhaps there’s an anniversary coming up that you’d like to celebrate or you just really fancy an afternoon treat and celebrating the Queen’s 90th birthday is reason enough. Update, Friday 20th May: The Chefs, gathering for afternoon tea. With a difference. Below is a peek behind the scenes here today, with the Fat Duck Experimental Kitchen development team and Hinds Head kitchen team, tasting 18 teas showcased by the team from Jing.

The purpose was that of matching the individual teas to elements of the newly-created Afternoon Tea offering for our event on the 12th June – tables still available but book quickly to avoid disappointment. Call 01628 626 151 or email reservations@hindsheadbray.com

Eight excellent teas were eventually chosen that compliment the flavours of the sweet or savoury item that will be a recommended pairing. We look forward to offering these exquisite fine teas alongside our gorgeous Afternoon Tea treats on June 12th.

Tea leaves settling after the boiled water has been poured in. A gorgeous swirl of slowing falling tea leaves, changing the colour of the water to the most fantastic shades – in all there were 18 teas presented and none were alike..
