A particular kind of curiosity runs through everything Heston Blumenthal does. It’s the habit of asking ‘why?’ about things the rest of us generally take for granted and then, inconveniently and perhaps even a little stubbornly, searching for an answer.
This autumn, you can see that curiosity at work in both our new menus.
Our autumn à la carte celebrates the season with Oxtail & Kidney Pudding and Wild Mushroom Macaroni, and Heston’s celebrated In Search of Perfection Chicken Tikka Masala. This comes from his search for the definitive version of Britain’s favourite curry: a dish developed through questions and culinary inspirations, with every element reviewed, refined and re-envisioned until it really could be called perfection.
Alongside it, our new Legacy Menu features dishes from Heston’s incredible archive, led by his Sand and Fish Pie – a proper British classic, cooked with the kind of attention that turns comfort food into something well worth a visit to Bray.
Of course, neither of these delicious dishes would reach the table without the people here. Our kitchen team bring precision and patience to every service. Our front of house team know our food inside out: the stories, the techniques and exactly what to drink alongside them. Ask them anything. (Well, almost anything.)
Inspiration, it turns out, is best served warm (or, more precisely, at 50 degrees centigrade for the Fish and Sand Pie).
